Rabot Estate, Soufrière St. Lucia
Rabot Estate in St. Lucia is a 140-acre cocoa farm and boutique hotel that is part of a UNESCO World Heritage Site. The estate is located in southwest St. Lucia, near Soufrière, and overlooks the Caribbean Sea and the twin Piton mountains. The estate has been in the same family since the 1930s, but was purchased by the British chocolate company Hotel Chocolat in 2006. The hotel’s restaurant serves inventive dishes with cocoa, including hot chocolate for breakfast, cacao-infused lunch and dinner, and a nine-stage chocolate tasting plate. The bar serves cocktails made with local juices, cacao bellinis, and martinis. The hotel is dedicated to ethical operations, including harvesting rainwater, sourcing 95% of its produce locally, and supporting local development initiatives.
